If the safety cam is not associated with any vehicle will it still record the video and store? If yes, what happens to the video after associating the SafetyCam to the vehicle?

The SafetyCam records video even if the GPS device is not associated with the camera and the video will be uploaded in the local SD card, but once the association occurs, the videos can be requested from the website but the event videos for the old events won’t be available.
